April’s Recipe – Breakfast Quesadillas

This is a recipe I found on Peach Palate and you can easily find it totally Paleo here. I changed it up a tad bit to make it easier for the hurried mommies out there. I also would add extra veggies and maybe some ground meat and cheese – especially if it’s for the kids. You could also use your hard boiled eggs from Easter eggs and make something very similar. Let me know your ideas to make this one your favorite!

This stuff does not have to be hard! Just get creative and have some fun!

Ingredientsย (Serves 1- 2)

  • 2ย tortiallas of choice
  • 1 tsp ghee or coconut oil or butter or spray
  • 3 large organic eggs + 1 tsp ghee/butter
  • Handful of spinach chopped, or any other yummy veggies
  • Pinch ofย Salt and Black Pepper
  • 2 tbsp guacamole

Quick Guacamole

  • 1/2 a large ripe avocado mashed
  • Dash of lime juice
  • Salt and pepper to taste
  • Coriander and Lime wedges to serve

Instructions

Whisk together eggs with salt and pepper.

Place in a pot with melted butterย over a low to medium heat. Whisk after a minute to break up the curds..cook for 1-2 minutes more; remove from the heat while still not fully set!

Stir through chopped spinach and veggies.

Place half the egg mixture in to each and fold over.

Place in a hot pan with melted ghee and cook each one (I prefer to do them one at a time but if you have a big pan you could cook them side by side!), for 2-3 minute per side or until lightly browned and crisp.

Serve immediately sliced in half (to make four wedges!) topped with quick guacamole!
